Simply Sourdough is an artisanal micro bakery in Goa built around natural fermentation, whole ingredients and time.
We bake sourdough breads, experiment with grains and fermentation, and explore the place bread occupies at the breakfast table.
Along the way, the bakery became a place for other things too.
Conversations.
Shared tables.
Experiments.
Unexpected encounters.
And questions that often begin with bread and wander somewhere else entirely.
At the heart of Simply Sourdough is still the bread.
Naturally fermented loaves made slowly, in small batches, with a changing collection of grains, seeds, flavours and seasonal ingredients.
Some are everyday breads.
Some appear for a season.
Some begin as experiments and decide to stay.
Bread has an unusual ability to gather people.
That curiosity has led to The Bread Ritual, an exploration of what happens when bread becomes more than something placed on a breakfast buffet.
It now finds expression in hotel breakfast rooms, around the Friday Morning Table at the bakery, and inside sourdough workshops.
Not every question that began in the bakery stayed there.
Some have wandered into the way we think, participate and encounter one another.
They are now being explored through thought experiments, improvisation and an evolving body of work called the Human Reality Atlas.
Not everything needs to become a project.
Some things simply need to be noticed.
The Slow Ferment Journal is where observations, questions, experiments and stories from the bakery and beyond are allowed to sit for a while.
